Thai Peanut Tofu Lettuce Wraps

This was so easy. All I did was press the liquid out of the tofu (extra firm), cut it up, marinate it in Thai peanut sauce for like 20 minutes and cook it for 30 minutes at 400 degrees (flipping once).

For toppings I julienned part of a cucumber, finely diced some yellow onion and sliced up some spinach really thin. Wrap it all up inside some red leaf lettuce, top with a little more peanut sauce and voila!

AND I found a place near my apartment that sells Ezekiel bread, which is something I’ve been wanting to try. I got the cinnamon raisin kind and had a slice with margarine for dessert. But I can’t say it was all that tasty. *shrug* It’s too expensive anyway.

Edit: HOWEVER, I also got a 3 lb bag of Braeburn apples there for $2.99 - that’s 99 cents a pound. Way cheaper than Hy-Vee.
